OUR STORY

Nakamura Brewing, founded during the Bunsei era (1818-1831), has been for over 200 years in Kanazawa. Kanazawa retains a strong presence of Japan's samurai culture. We have inherited the spirit of this region, famous for its craftsmanship, and we create the finest sake using advanced craftsmanship. Our products have been presented to the Pope and sought after by French master chef Alain Ducasse, for whom we created a sake that bears his name. Now, looking towards a new era, we have introduced KAGASHIKI, a top-quality Junmai Daiginjo that blends Japanese tradition and technique.

“KAGASHIKI”

KAGASHIKI is a sake that condenses the essence of Japanese tradition and craftsmanship. It utilizes Hyakumangoku-no-Shiro, a unique sake rice from Ishikawa Prefecture, polished down to 40%, creating a distinctive terroir. Brewed entirely by hand by the Noto Toji master brewers, it is a rich and refined Junmai Daiginjo. It features a delightful Ginjo aroma, complemented by the savory richness of rice, with a clean, crisp finish. The bottle and packaging lavishly incorporate gold and silver leaf, representing Mizuhiki (decorative cords) and seasonal Japanese sake brewing scenes. It truly evokes the ultimate sense of Japan. This product is a collaborative effort with Flagship Global in Singapore and is being introduced to people worldwide who seek the finest sake, with a particular focus on Singapore.

MAREBITO720ml

MAREBITO is brewed using Mikohara Rice, grown on terraced fields in the mountainous Mikohara area of Hakui City, located to the north of Kanazawa. We have brewed a special sake that strongly brings out the rich flavor of the rice. The bottle is produced at a Taisha ware pottery kiln, located next to the Keta Taisha Shrine in Hakui City. Each bottle is handcrafted using the 'Shinyode' technique, where fresh leaves from the shrine's forbidden forest are imprinted and fired onto the pottery. The taste is both rich and pure. We had the honor of presenting this sake to the Pope.

Nichiei Alain Ducasse Selection720ml/375ml

French master chef Alain Ducasse has a deep understanding of Japanese culture and has shown great interest in the craftsmanship and traditional techniques of Kanazawa. It was during his visit to Kanazawa that our connection was established. In pursuit of realizing the concept of sake envisioned by Ducasse, his chief sommelier, Gérard Margeon, visited our company. After inspecting the rice fields and our brewing process, he finalized a flavor that met their standards. The resulting sake maximizes the rich umami flavor of the rice, with a crisp and clean finish. It is a sake that pairs delicately with the ingredients highlighted in Ducasse's cuisine.
